Gluten free, refined sugar free, dairy free and delicious!
I’ve been looking a while for a clean muffin recipe that doesn’t taste like a pile of dry shit, and after a few experiments, I’ve finally discovered one!
Clean Oatmeal-Banana Muffins
- 1 cup vanilla almond milk (you can choose if it’s sweetened or unsweetened, I did a 50/50 blend of both)
- 1 cup oats (I used old fashioned)
- 1 egg
- 1/4 cup mashed banana
- 1 cup oat flour (just blend 1 cup of old fashioned oats under powdery)
- 1/4 cup honey (if you usually use creamed honey, just heat it up slightly before using)
- 3 teaspoons baking powder
- 1/4 tsp sea salt
- 1 tsp cinnamon
- seeds, nuts, fruit, dried fruit (Optional)
- Preheat oven to 400 Fahrenheit
- In a small bowl, mix oats and almond milk together and let sit for 15 minutes.
- In a large bowl, blend together banana and egg. Once combined, blend in honey.
- In a medium bowl, combine oat flour, baking powder, salt, and cinnamon.
- Pour oatmeal mix into the banana/egg/honey mixture and blend together, then blend in the dry ingredients.
- Blend in anything else you want! I added 2 tbsp of ground flax seeds.
- Pour into lined muffin tins, about 2/3 of the way full.
- Bake in preheated oven for approximately 15 minutes. Do more or less as you please.
- Makes about 8-12 muffins, depending on how you fill your cups.
This recipe is honestly delicious, and I’m a picky eater. They’re moist and soft with a hint of banana, and not to mention SUPER filling. My batch turned out to be 110 calories per muffin, so they’re they’re the perfect combination of light and savoury. When I have these for breakfast, 2 muffins holds me well past lunch. Plus, they’re handy on-the-go! If you wish to make these muffins vegan, just use the old flax meal and water trick.
